Shore Lodge’s House-Baked Pretzel Sticks
Makes 8 servings
Prep Time: Approximately 1 hour and 10 minutes to combine ingredients and for dough to rise, be portioned and rest
Cook Time: 30 minutes to boil, dry and bake pretzels
Ingredients:
1 1/2 cups warm water
30 g. brown sugar
0. 25 oz. dry yeast
4 1 oz. unsalted butter, melted
1. 25 oz. oz. water 3/4 cup baking powder Egg wash (Crack an eggs into a small bowl, add 3/4 cup of water, and whisk to combine. You can also use the yolk or white, if you prefer. )

Instructions:
1. Preheat your convection oven to 360deg F.
2. In a bowl .
combine warm water, brown sugar and melted butter. Mix the ingredients together with a dough hook. Let it sit for at least 30 minutes to make sure the yeast is active.
4. Mix flour and yeast until it is bubbly. Mix in the kosher salt, and continue to mix on low until everything is well combined. Mix on medium speed until dough pulls away from the sides. Add flour slowly if necessary.
5. Once the dough is smooth, transfer it to an oil bowl. Cover the dough with plastic and let it rise until it doubles in size.
6. Bring water to a boil in a large saucepan.
7. Once the dough has doubled, divide it into three-ounce pieces and form it to your liking.
8. Let dough rest for another 10-15 minutes.
9. Add the baking soda once the water has boiled. Boil your pretzels for 30 seconds on one side, flip and repeat for the other side.
10. Place the pretzels on a parchment-lined sheet pan that has been well greased or spray with cooking spray. Let them dry for 15-20 minutes until the skin has formed.
11. Flip pretzels upside down on a piece of parchment paper. If desired, you can cut slits in the pretzels and sprinkle sea salt or kosher salt.
12. Bake at 360deg F for 10-15 minutes, rotating halfway through until you get your desired color. Serve with the garnishes of your choice.
