Mike Kalanty is an artisan bread baker and certified master taster. He directs the artisan bread program at the California Culinary Academy and works on the educational committee for the Bread Baker's Guild of America, where he also writes for the baking quarterly, BreadLines. He is the author of How to Bake Bread: The Five Families of Bread (Red Seal Press), a revolutionary book that breaks down bread baking into five families based on bakersí percentages of sweetener, fat and water. His certifications include Executive Pastry Chef and Culinary Educator.
