Dwight is Campus Executive Chef at University of California, Santa Cruz. He is responsible for food quality, menus, and recipe maintenance for over 14,000 students in ten dining halls as well as the faculty/staff restaurant and lounge. His personal interest in regional BBQ has led to numerous awards and his New England Clam Chowder recipe has won First Place and People's Choice Award at the Santa Cruz Beach Boardwalk competition an unprecedented 6 times.
