Mark is President/COO and Director of R&D for Pastry Smart, LLC, a company he founded in 2006 that focuses on the production of fine chocolates, artisan breads and pastry products for a variety of foodservice applications using mostly organic ingredients. In 1998, Mark joined the pastry team of the Ritz-Carlton Hotel company at Amelia Island, advancing to become the company’s youngest Executive Pastry Chef at age 24. He eventually moved with the Ritz-Carlton to San Francisco. He was also the Executive Pastry Chef at The Lodge and Courses at Pebble Beach. Mark owns the Saratoga, Calif. French restaurant Gervais with his wife.
