Nicole Plue Wins 2010 Best Pastry Chef, James Beard Foundation Award
Considered one of Californiaís premier restaurant pastry chefs, Nicole Plue crafts her unique and flavorful sweets at Redd in Yountville, CA. After training at the California Culinary Academy, Nicoleís pastry career kicked off at San Franciscoís Hawthorn Lane where she ran an ambitious bread program and served as pastry chef for three years. Her next stop was New York City to open the pastry department at Danny Meyerís 11 Madison Park. She then opened Terrance Conranís Guastavinoís before heading to Martha Stewart Living Television to develop recipes for pastry and baking segment.s
Nicole returned to California in 2003 to create desserts at Juliaís Kitchen in Copia: The American Center for Wine, Food & the Arts in downtown Napa. She moved up valley with her appointment at Redd. Her accolades and awards include Pastry Chef of the Year by San Francisco Magazine and Rising Star pastry chef in 1997 by the San Francisco Chronicle. Nicole Plue won the 2010 Best Pastry Chef James Beard Foundation Award, a national award for which she has been nominated for in both 2008 and 2009.
